When I want pickles, I don't tend to have a lot of time (or patience) to wait for them, which is why I am a big fan of quick pickles. They still have tons of flavor, but are done within minutes, instead of days. These radishes are great with Mexican or Asian cuisine and delicious on their own. -- Red
Quick Pickled Radishes Serves 6-8 as a garnish
1 Bunch radishes 2 Teaspoons salt 2 Teaspoons sugar 1 Tablespoon vinegar (I use white for Mexican cuisine and Mirin for Asian cuisine)
Cut and clean radishes of their top leaves and stems. Thinly slice in 1/6ths and place in a medium-sized bowl.
Toss with sugar and salt and let sit for 15 minutes.
Add vinegar, mix and serve.
