Yes. What you read IS true. Everything.Pretzel.Rolls. They're just as amazing and delicious as you'd think they'd be. And, you don't have to do anything dangerous and weird with food-grade lye. They taste just as good when you sub safer baking soda instead. This will upgrade anything you put between these buns (that's what someone said?), but we originally used and loved these with our brats from our Oktoberfest party.

Everything Pretzel Rolls
Makes 8 large rolls or 16 medium rolls
- 1 Package of Yeast
- 1 1/4 Cups Water
- 1 Tbsp Brown Sugar
- 4 1/2 Cups Flour
- 1 tsp Coarse Salt
- 1 Tbsp Butter, Softened
- 1 1/2 Cups Baking Soda
- 1 Recipe Everything Spice Mix (click for recipe)
In the bowl of a Kitchenaid mixer fitted with a dough hook attachment, mix sugar and 1 Cup of warm water (approximately 110- 115 deg F). Sprinkle the yeast over the water and sugar and let sit aside until it is foamy, about 5-10 minutes.
In a medium bowl, whisk the salt and flour until combined.
When the yeast has bubbled, add the flour mixture and softened butter. Mix on a low speed until the ingredients are incorporated, about 1-2 minutes, slowly adding the 1/4 of water as needed/necessary.
Turn the speed up to medium and knead the dough for about 8-10 minutes, until elastic.
Move dough to a clean and greased bowl. Cover with a clean kitchen towel in a warm spot until the dough rises and has doubled in size, about 45 minutes.
Meanwhile, in a large stock pot bring about 10 cups of water and baking soda to a boil.
Preheat the oven to 425 degrees F.
Place Everything Spice Mix on a shallow plate for dunking.
When the dough has risen, place the dough on a floured surface and portion out the rolls, in either 8 or 16 portions.
With a spider or slotted spoon gently lower the roll into the water for 15 seconds.
Remove, roll in spice mix and place on a greased baking sheet.
With a knife, slice slits down the middle of each roll lengthwise.
Bake for 10-15 minutes, until the rolls are cooked through and golden. Cool and serve.
