Who doesn't love the combination of mint and chocolate? Some of Red's favorite childhood memories is finishing off one Andes mint after another in a post-holiday dinner coma. Heat the chocolate up and and you've got a heating and cooling mug of what tastes like one slowly melting in your mouth.
Mint Hot Chocolate Makes 1 cup
1/2 Cup Heavy Cream 1/2 Cup Whole Milk 1 Oz Bittersweet Chocolate Chips (apx 1/4 Cup)--use the good stuff, it's worth it 1 1/2 Tablespoons Cocoa Powder 1 Tablespoon Granulated Sugar 1/4 Teaspoon Peppermint Extract
Combine chocolate, cocoa powder and granulated sugar in a small mixing bowl.
Meanwhile, heat milk and cream in a saucepan on medium-high, until at a simmer.
Pour the dairy over the chocolate and let sit for 30 seconds. Add the peppermint extract and whisk until fully combined and the chocolate is melted.
